The kit contains:
Rice
Penang sauce
Peanuts
Star anise
Cinnamon
Coconut cream
You’ll need:
Beef (or try quorn or squash for a veggie option)
Olive oil
Start by cutting the meat into thin strips. Next pop the peanuts in a pan and grill them for a minute or two, until they go a little bronze. Take the peanuts out and add a tablespoon of olive oil to heat, and then add in the sauce. Immediately add in the beef strips and sear them for a couple of minutes. Follow with the coconut cream, turn the heat down, add in the rest of the ingredients and let this mixture simmer for a few minutes. You can also add a little bit of water if you prefer thinner sauces. Whilst the sauce is cooking, pop the rice bag in the microwave for 2 minutes and let it sit. The Malay Penang will be done in around 5-6 minutes.
To serve, place the rice at the bottom of the bowl and cover with the beef sauce. I added a few prawn crackers and a dash of soy sauce and boom – we’re all set.
This tasted, and looked, delicious and for me was a great cheat weekday meal.
